Spicy Honey Curry Roasted Chickpeas

Sweet, spicy, and smokey flavors coat crispy garbanzo beans for a satisfying crunch!



An old elementary school friend and I cooked our first batch of these suckers in third grade and I haven't stopped baking them since! We always loved cooking with each other's families during visits, but when a recipe was simple enough for just the two of us to tack together, dinner tasted extra special. This recipe requires just about five minutes of prep time and packs some serious flavor which is sure to impress.



Ingredients

  • 1 Can (16 oz) Chickpeas/ Garbanzo Beans

  • 1.5 t paprika

  • 1.5 t garlic powder

  • 1.5 t sweet curry powder

  • 1 t onion powder

  • 1 t salt

  • 1 T spiced honey (or regular with a dash of red pepper or cayenne powder)

  • 1 T olive oil



Procedure

  1. Preheat oven to 415° F. Line a baking sheet with parchment paper.

  2. Strain chickpeas and rinse with water to remove the chickpea liquid, Aquafaba. Fun fact- save this liquid to make a vegan mousse or other new recipes!

  3. Spill chickpeas into a bowl and mix with all spices. Give the mixture a good stir for an even coating.

  4. Place on your sheet and bake for 40 minutes, shaking the pan after 20 to give this snack a nice and even cook.

  5. Allow to cool before enjoying!


    These yummy treats are great on the go, mixed into pasta, salads, rice, and anywhere else you want to add a satisfying crunch! Some other delicious spice combos we enjoy are garlic parmesan, a honey mustard mix and glaze, sweet chili, or whatever just feels right at the moment.
