Loaded Lobster Rolls (Butter, No Mayo)

We're all smiles for these incredible butter-based lobster rolls... please hold the mayo!

Ingredients: (Serves 4)

  • 1 lb lobster meat, cooked, chopped (claw and body)

  • 3 T Salt

  • 1/2 C (8 T) Salted butter

  • 1 minced garlic clove

  • 3 T fresh chives

  • 1 T fresh parsley, finely chopped

  • 2 Pinches black pepper

  • 1 Fresh Lemon, half juiced, half wedged

  • 4 brioche or hotdog buns (we even tried pretzel and it was excellent!)


Procedure:

  • Melt 6 T butter in a large sauce pan over medium heat. Add aromatics, then lobster, gently stirring until warmed. Add black pepper and juice of half a freshly squeezed lemon.

  • Brush 2 T softened or melted butter on buns. Grill or toast in the pan until slightly charred.

  • Divide lobster meat amongst the buns and garnish with parsley and lemon juice. Enjoy!
