Apple Pie Granola

Add a delicious apple-pie-flavored crunch to your yogurt, smoothies, or simply enjoy by itself!


Not only is this recipe fool-proof, it will leave your whole home smelling delicious.



Ingredients

  • 3 C Rolled Old Fashioned Oats

  • 1/4 C Melted Coconut Oil

  • 1/3 C Maple Syrup or Honey

  • 1 t Vanilla Extract

  • 1 Red Apple, chopped (I LOVE Honeycrisp)

  • 1 t Cinnamon

  • 1/4 t Nutmeg

  • 1/4 t Salt

  • 1/2 C chopped pecans or walnuts, optional


Procedure

  • Preheat oven to 325° F

  • Combine all dry ingredients and chopped apple in a medium bowl

  • Stir in wet ingredients

  • Once evenly stirred, spread the mixture on a parchment-lined baking sheet

  • Bake for 20 minutes. Toss around the granola on the tray for even cooking. Bake for another 10 minutes.

  • For crispier granola, let cool on the baking tray. Once cool, then transfer to a bowl or bag for storage.

  • My favorite way to enjoy this granola is in some vanilla Greek yogurt or by itself for a quick snack.
